What CCTV does a workshop need?

Yes, if a camera covers vehicles arriving with enough detail. It is worth positioning specifically for that, because it is what the footage will most often be used for.
Will welding affect the cameras?
It can cause interference if video cable runs near the welding supply. Separating the cable runs at install prevents it, and it is much harder to fix afterwards.
How long should a workshop keep footage?
Long enough to cover the gap between a vehicle leaving and a damage claim arriving, which is usually a fortnight to a month rather than a few days. Set retention from when disputes have actually reached you, not from whatever drive came with the recorder.
